Slow roasted salted belly pork rolled in dry chilli flakes. Cooked until all the fat has gone and it's falling apart.
Pil Pil Turkey strips cooked with a bit of chilli heat, lime juice and lots of sweetness.
Served with cheese/chilli seeded bread toasted, warm flatbread, tzatziki (yeah, that's Greek) and olives.
To drink: the cheapest Tempranillo in the shop for that authentic cantina vibe and chilled Estrella.
