Misura Great read. Reminds me of my uncle, actually great uncle - proper butcher, in fact Master butcher whatever the difference is. He had a shop up until the late 60s and a lot of people I've talked to have nothing but praise for the shop and him and my auntie. She used to be up at 4ish making pies. I always remember him referring to cows as beasts, 'Aye, I remember going over Lincoln way to buy a couple of beasts...'
Ham was always called boiled bacon too.
