Harvest its Jamie Oliver’s one.
2 eggs in a measuring jug - I mark where they were up to in the jug with a marker (wipe off)
tip them into a bowl
then put milk into the jug up to the line
tip that into same bowl as eggs
put plain flour into jug up to the line
tip that into bowl with eggs & milk
add good pinch of salt
whisk to all lumps have gone
the oven should be hot (usually is as you’ll have done your roast and roasties in it)
put your tray in for ten minutes (middle of oven or above, not low in oven).
take tray out - put some oil in each well (i use mucky fat from previous roasts). Doesn’t need too much about a 3rd of the well
put tray back in to heat the oil up for 5-10 mins
pour batter into each well using a small ladel
return to oven and leave the fuck alone for 25 mins
look through oven glass (don’t open) they should have risen and be turning golden brown - the time is not always accurate as it depends on how hot your oven is.
if they’re Golden Brown (texture like sun) and nicely risen then they’re done.
the ones I did, i used garam flour. Seemed to work ok.
