I do oysters. As above - lemon and a drop of hot sauce. Pair with Chablis if you want your end away, or Sauvignon blanc if you’ve already married her.
Also mussels steamed in white wine and garlic. Pair with any white Bourdeaux. If you’ve not stumped up for the oysters, the wine isn’t going to get you special Birthday privileges so save your brass you tight sod.
