Placid Reggie_Perrin Probs best to use something milder though. You’ll be fine with Peccorino and Emmanthal. Not strong tasting at all. Peccorino is like a weaker parmesan and emmanthal is like a nutty weak comte. Comte is the King of Cheeses btw
