To win against such big competition in Wales is fantastic and goes to show the level of self belief we had to push ourselves to this level.Matthew started the shop four years ago with strong support from his girlfriend, Anna Ingram, and the rest of his family, in particular his mother who sadly passed away in 2009."We set this as our target two years ago and to be named the best in Wales makes all those early mornings and extra effort worth it for me, the shop's manager Ryan Hughes and the rest of the staff."My mother was the backbone of our family and when I heard the news of the shop's win she was the first person I wanted to call. It's credit to her that we've come so far."I can't even think how we're going to celebrate this; we'll need to come back down to earth first!"

Hong Kong: The Globe, 45-53 Graham Street, Central; great fish, fluffy, crisp batter, home-made thick cut chips, mushy peas are homemade, not great, but as everyone makes their own in HK they're the best of bad bunch. The Pawn, not bad, like above, chips more of the frozen type, garden peas instead of mushies..
